Breakfast - 2 slices of turkey bacon, 1 fried egg, 1/2 gf cookie, tea

Lunch - Rice, tofu, chicken, corn, bok choy and mushrooms, broccoli, clear noodles (rice?), pineapple, 2 gf cookies - I had to finish them off to remove the temptation.  That is my excuse and I am sticking to it.  And the cookies are sticking to my teeth, and will stick to my stomach and hiney.

Dinner - hot dog (hebrew natl.), food tastes good chips, goat cheese, salad, piece of chocolate, 1/2 banana, few slices of apple

Breakfast - tea, scrambled eggs w/ collard greens and a little goat cheese, and a gf cookie

Lunch - salad, strawberries, part of a clementine orange, part of a gf cookie

Snack - carrot, celery, apple, almonds, pop chips, rice cake type thing w/ goat cheese

Dinner - soup (veggie broth, sweet potato, broccoli slaw, sprouted quinoa, rice noodles, miso) and gf skillet cornbread and 1/2 of a gf cookie

My allergies are rather bad today and I have no appetite - which is quite unusual for me.

Breakfast - hardboiled egg, banana, tea

Dinner - brown rice with adzuki beans and butternut squash (leftover from last night)
             collard greens and baby bok choy
             a little bit of gf soda bread that I made from a recipe in Washburn and Butts book.  I did not like it.

Monday, March 21 - Day 13 gf after a day off

Breakfast - 3 cups of Twig Tea - one with lemon, egg - fried, spinach - fried, w/ lemon juice on it

Lunch - salad - mixed greens and fruit, glutiono crackers, almonds, banana,

Snack - last little piece of goat cheese

 I actually made a good gluten free bread!  Yay!  And I learned things about my bread machine I did not know.  I got the recipe from the Complete Gluten-Free Cookbook by Donna Washburn and Heather Butt.  I made their Ancient Grains bread.  It came out a bit too moist, so next time I make it, I will bake it a bit longer.  From their cookbook I learned that I can use the dough setting on my bread machine (I knew that), and then when it is done mixing, pull out the paddle so it does not leave a big hole, and cook it on the bake cycle.(I did not know that.)   I never even noticed that there is a bake cycle on my bread machine.  And it worked!  I am so excited!  My son ate 4 pieces of the bread.  It is that good.  Because it has cornmeal in it, it tastes a bit like cornbread, but is textured like real bread.  Yum!

Dinner - homemade gluten free ancient grains bread - with soy free Earth Balance margerine, garlic lime chicken (from the Saving Dinner cookbook - very yummy - everyone liked it.), and baby bok choy and broccoli and a ginger cookie

Well, I went 12 days on the gf/df trial and gave up today.
We had a potluck at church.

Breakfast - one piece of low salt turkey bacon, scrambled eggs, half of a banana, tea

Lunch - potluck - white rice, salad, tofu dishes w/ veggies, a little bit of lasagna, something else with noodles - not a lot, baby bok choy dish, and part of a brownie and part of a cinnamon cake thing.  yum! 
I will find out if I feel different since I totally had gluten and some dairy.

Dinner - salad and asian pear , almonds and tostitos

ugh.  I can tell that I ate differently today. 
upset digestion.

snack/dessert - more gluten -and sugar - tried a little piece of pumpkin cake that my daughter made.  it is good.

It is supermoon day!  I looked at the moon last night.  It just looked round and normal. 

I am tired of this gf/df thing.
Two more days.
If I make it.

Breakfast - goat cheese, banana, Organic Rainbow Rings cereal

Lunch - packed for work - almonds, peanuts, tostitios,  clementine orange; brown rice/ quiona/ veggie mix

Dinner - millet/amaranth, salad, some of an asian pear, strawberries, purple yam

This evening, around 8 pm,  the moon was huge!

Snack - tostitios, goat cheese, mustard

I am not sure that this gf/df thing is making any difference at all.
That could be because I am probably not really getting all of the gluten or dairy out of my diet.
It is harder than I thought to do that.

Breakfast - a slice of turkey ham, an egg- fried, and a slice of goat cheese and tea and a ginger cookie
(yes, I know the cookie is probably fattening, but it is yummy and gluten free)

Lunch - banana, rice chips, and a ginger cookie
the ginger cookies are the teff/ ginger/ molasses cookies
they are really good and totally gluten free
they are also sugar free
but they have a half of a cup of molasses, a half of a cup of maple syrup and a half of a cup of almond butter in the batch of 24 cookies.  is that bad?  they taste good! 

Snack, Tostitos, goat cheese, olives, ginger cookie

Dinner - potluck - fried rice w/ shrimp and some sort of meat and veggies, stir fry veggies - carrot, cauliflower, broccoli, hardboiled egg - the kind cooked w/ pork and soy sauce so it is brown,  tofu, ginger cookie

I am getting tired of this gf/df thing. 
And I am not even doing it right. 
Bummer.
I feel hungry without the empty carbs. 
Then I eat other stuff instead. 
Like almonds. 
Which are fattening.
Some people have lost weight going gf.
Not me.

So for today:

Breakfast - cooked millet and amaranth with a little coconut milk and tamari and a fried egg
                   tea, and a teff/molasses/ginger cookie.

Lunch - salad - greens, strawberries, olives, gf dressing, water

Snack - hummus chips, lemon, ginger cookie

Dinner - rice/quinoa casserole w/ carrot, onion, butternut squash, cilantro, collard greens
             a few bites of roast beef
             some purple yam and carrots that were cooked w/ the roast
             some goat cheese and hummus chips

Day 9, Wednesday, March 16

Breakfast - scrambled an egg with the rest of the quinoa, millet and other grain mix and added a little spinach with it.  Drank twig tea and water.

Lunch - salad - greens and dressing and olives with pimentos, hummus chips gf, part of an asian pear, and I could not stand the dairy free any more - I bought some goat cheese and had a few pieces of that - yum! 

Snack - 5 smarties candies - shared with the kids - we got 5 each.

Dinner - homemade miso soup - 3 bowls,  and some goat cheese and hummus chips

Snack - almonds, homemade teff/ginger/molasses cookies

Well, it is the Ides of March.  Beware.
At least one of Japan's nuclear reactors is melting down and radiation is leaking out.

Perhaps he really will live there.

I have survived one week of gf/df eating.  I have had small amounts of each - both on purpose and accidentally a few times, so I am not sure if it truely counts as total gf/df. 
I have not had as much achiness as I had last week before starting this gf/df diet.
Is that related or coincinence?
Not sure.
I will go one more week and see.

Breakfast/brunch - a mix of quinoa, millet, buckwheat, teff and amaranth cooked in chicken broth,
and an egg, and tea.

snack - corn chips and salsa at Costco, toasted pepitas, grapefruit, lemon

Dinner - quinoa mix, salad, a bit of gf bread that I made.  It is really bad.  I guess I will throw it out.

Day 6 - Sun., March 13, 2011

Over 10,000 Japanese are dead from the earthquake and tsunami and many of their nuclear power plants are shut down and in danger of melt downs. 
How do you pray for an enitre country? 
Just wow.

We got 5 foster kittens from the animal shelter yesterday. 
They are only 4 weeks old, but they are supposedly "weaned". 
Poor babies - they were taken from their mommy way too soon. 
We are syringe feeding one because she is not really eating and is so skinny.

As for my own eating:

Breakfast - 2 slices of turkey bacon - yes - processed food - sorry Michael Pollan
and one World's Best Egg - fried in olive oil
and a giant strawberry
and Twig Tea

Lunch - salad, quinoa, rice chips, almonds

Dinner - frozen dinner thing of rice and mushrooms and something else, banana,  rice chips, almonds

Day 6, Saturday, March 11, 2011

Well, after last night's gluttony, I had a rumbly in my tumbly - as Winnie the Pooh would say.
Was it worth it? 
Not sure.
I wonder what caused the upset tummy - was it one of the foods or the whole combination of so many?
I am reading a book called You Are What You Eat and it talks about food combining and it very well could just be the combination of foods that put a rumbly in my tumbly.
Or was it the Cranberry Kombucha tea I drank yesterday afternoon?
I feel a bit like the caterpillar in the book The Very Hungry Caterpillar. 
So now I should eat through one nice green leaf again.

I am trying a new tea today.
I had a coupon for it and it was on sale!
It is Yogi Chai Rooibos.
It says it is "Spicy-Sweet And Stimulating"  but no caffeine. 
However, "these statements have not been evaluated by the FDA".
It is brewing now.
I will find out how "stimulating" it is. 

Japan is a mess.
It is worse than Christchurch, New Zealand.
Tsunami's really mess things up.

I drank the tea.
It was good.
I don't feel "stimulated" though.
I still miss coffee.

Breakfast - 3 of Jessica's deviled eggs (they are halves)
- leftovers - with jalapenos in them.  yum.  I realize they have paprika on top, which is a nightshade which I am trying to avoid because supposedly they contribute to inflation.  For that matter I guess the jalapeno is a nightshade too.  Bummer.  It is more difficult to avoid groups of foods than I realized it would be. 
And the tea.
And one of my cookies I made yesterday.  They are Teff, Ginger Molasses cookies from the Clean Food cookbook.
I love that cookbook! 
I checked it out from the library and it is so good that I actually bought the book.
I made the marinated tofu with ginger cashew dipping sauce from that cookbook last night and it came out very yummy!  Except my dipping sauce was too thick- it was more of a spread on sauce than dip into sauce. 
And the quinoa that I made last night was based on their quinoa with almonds and currants recipe.  Except I altered the recipe and used toasted pepitas instead of almonds and yellow onion instead of red onion and cilantro instead of parsley.

Lunch - a salad - with leftover quiona, the last deviled egg, mixed greens, blueberries and strawberries and gf dressing and red wine vinegar.  And some sea salt rice chips.  And a teff/ginger/molasses cookie.  Yum!
Now I want to buy more teff flour just to make more of those cookies.

Snack - lemon, almonds, rice chips

Dinner - soup - homemade chicken veg broth, chicken, carrots, onions, broccoli, leftover baked tofu and some of it's sauce, and coconut milk.  yum!

Day 5 Friday, March 11, 2011

The biggest recorded earthquake ever to hit Japan along with an accompanying tsunami has left hundreds or more dead and countless people there homeless this morning.  I feel bad blogging about my food with that going on. 
May the Lord be with the Japanese.

I was so tired last night I went to bed early.  Then, of course I woke at 1 am, 3 am, 5 am, but am less tired today.

Breakfast - gf muffin, tea

Snack - almonds, banana

Lunch - salad of mixed lettuce, orange, strawberries, olives, gf dressing
            rice chips, almonds

Dinner - ate way too much, but yummy! 
I made baked tofu with "dipping sauce" - I followed the recipe, but my "sauce" was very thick - we spread it on top of the tofu rather than dipping into it. 
And I made quinoa with toasted pepitas, currants and cilantro and onions and spices.  yum! 
And I made teff, ginger, molasses cookies - actually very good and the first thing I have liked with teff flour. 
And salad with blueberries and strawberries.
And Jessica brought deviled eggs with jalapenos in them which I actually love, and some yummy rice and chicken baked thing - it had a little cheese on top which I tried to avoid, but I did have a bit of cheese and it was really yummy too. 
And a glass of wine later in the evening.
No longer starving to death.

Day 4 - gf/df attempt March 10, 2011

I am soooooo tired. 
That is probably a result of working many hours, not sleeping well, and allergy med, but now I cannot counteract it with caffeine. 
I miss coffee. 
I found out that spelt - which I put a small amount of in my gf flour for muffins - is not gluten free. 
Go figure. 
I am still eating some muffins today. 
I will try to go shopping soon and get some rice flour and more tapioca flour.
 
I meant to bring some gf cookbooks to work today to go through during my time off but I forgot to and I brought several books anyway.  I am reading Three Cups of Tea right now about a man who has established many schools for girls in Pakistan.  I am also reading Families Where Grace Is In Place and Teaching With Love and Logic.

Breakfast this morning

Snack - almonds, carrot sticks, blueberries, two strawberries

Lunch - leftover rotisserie chicken, sweet potato, banana, one of my homemade "gf" muffins, water, vitamins
I can eat leftovers at work because there is a microwave oven so I can heat it.  Our microwave died a few days ago and we miss it terribly.  I did not realize how much we really use it. 

I often bring my vitamins and supplements with in my lunchbox but usually don't take them.  I just don't like taking handfulls of pills.  But I took them today.  I wonder if they may have contained any dairy or gluten? 
I took one giant green natural type multi-vitamin, something brown, a white capsule, folic acid and co-Q enzyme.  I can't remember what the brown and white capsules are.  I think one may be hawthorn and the other may be l-lysine, but I am not sure - will have to check the bottles at home.

Day 3 of gluten and dairy free March 9, 2011

I am going to starve to death because there is nothing left to eat! 
Ok, probably not, but I need to come up with more things to add to my diet.
I have no gf/df bread - found some recipes - will try making some.

Breakfast - tea - decaf peppermint - not as good as coffee would be.
and a hardboiled egg - getting a bit tired of those
and some peanuts and walnuts

Snack

Lunch - salad - lettuce, spinach, strawberries, olives - green with pimentos, turkey ham (yes, it is a processed food and may have gluten or dairy - I read the label but can't remember the stuff in it and it is thrown away.)  and gf dressing

Dinner - rotissere chicken, mango, blueberries, strawberries and two gluten free muffins that I made.

For the gluten free muffins -
I made up a mixture of gluten free flour.

In the Vitamix I ground some almonds - some raw, some toasted because I had both,
some spelt, millet, amaranth, brown rice, chia, and lentils
I added in some teff flour and coconut flour.
I mixed that all together and it was about 2 1/2 cups and then I added one cup of tapioca flour.

For the muffins, I put about a half of a banana, half of a carrot, and 1/4 of an apple in the vitamix along with one egg, 1/4 cup almond milk, some honey, agave nectar and maple syrup and some coconut oil.
I blended that into a liquid.

I used a little over 2 cups of my flour blend, the liquid from the vitamix, 1/2 t salt, 2 t baking powder, 1/4t baking soda and made the muffins.
I baked them at 350 until they were done.
They are a bit dense and have a different flavor from wheat muffins, but they are ok.

Day 2 dairy and gluten free - March 8, 2011

By the way, I stopped drinking coffee last Thurs.  I have had some headaches, but other than that am doing ok.  But yesterday morning, I woke up dreaming about coffee.  I have never in my life dreamed about coffee.  Perhaps I miss it more than I realize. 

Breakfast - hardboiled egg, tea, apple
Lunch - leftovers - Chicken Marsala over rice noodles and millet/quinoa mix
               salad w/ gf dressing
               cutie orange
               a few peanuts and walnuts
Snack -  banana

3/7/11 Trying anti-inflamatory diet

I cut out caffeine last week - Thurs. was my last coffee.  I miss it.
I have had some headaches, but am not sure if that is from allergies or caffeine withdrawal.
I am cutting out milk products and gluten to see if that will help me to feel better.
I did not sleep well last night - woke several times w/ headache and unsettled stomach.
Tried to sleep in since I have a long night ahead of me, finally fell asleep in the morning for a little bit and woke up dreaming about coffee.
My back hurts, my hips hurt, even my toes were hurting this morning.  And my shoulders were hurting.
I hope that a dietary change might help.
So, for breakfast - a cup of tea, an egg cooked over easy - in oil, not butter (butter tastes better though) :(
and a half of an avacado.
Lunch - salad of millet/quinoa mix, spinach, strawberries, blueberries, marinated artichoke hearts, turkey ham, hardboiled egg w/ gf salad dressing and red wine vinegar, peanuts and walnuts, banana
Dinner - chicken (breaded in coconut flour) marsala w/ mushrooms and marinated artichoke hearts, rice noodles, salad, fruit
