So, after a week of paleo, I have only lost one pound and I have felt deprived and craved grains the whole time. So, I am adding grains back in - except for wheat. I guess it will be a semi-gluten free diet - I am not going to insist on the gf as much as the no wheat.
I also am adding back a little dairy, but not much - half and half in my coffee, butter on things etc...
Tonight I made gf cornbread - from a mix and it was sooooo good.
I also had a little rice that I had mixed w/ some veggies and baked in acorn squash - yum!

day 4
Ok, I have done this for 3 days so far and this is the 4th day. No grain, and no dairy and no sugar. I have had a headache for the past couple of days. Withdrawal? Not sure.
So far, I have lost about a pound or a pound and a half.
Not sure if that really counts as anything yet.
Why is gaining weight soooo much easier than losing it?
I tried to make zucchini bread yesterday from a paelo recipe.
I think the recipe had the wrong amount of almond flour listed.
I did change the recipe a bit because instead of grating the two zucchini, I put them in the vitamix with the 3 eggs and instead of 1/2 cup of coconut oil, I used a bit less and added in some applesauce. It only called for 1/2 cup of almond flour. That was not much so I added more almond flour and some coconut flour. It was very bright green. Almost fluorescent green. I have a photo I will add of it in the oven. It never did bake to a bread like consistency. More quiche like I guess. And not a lot of flavor. It was ok hot with salt. I have a lot left over. Perhaps I will try to toast some in the toaster oven?

Obviously I need accountability
because I start things all the time and then don't finish them.
I need to lose weight and get healthy.
I have gained quite a bit of weight recently.
I have gone up a size in pants in the past few months.
I have gone up two sizes in the past couple of years.
My fat pants don't fit.
I had to get new fatter pants.
My blood pressure is up some.
I thought I was retaining chocolate, but perhaps I am retaining water too.
I weigh now what I weighed at the end of my first pregnancy.
I have read lots and lots of diet and health books.
I have learned that reading books does not make me skinny or healthy.
So, now I am trying the paleo diet - sort of - I don't eat pork or beef though.
I am trying to avoid wheat, sugar and dairy for a while to see if that helps.
I had a nice paleo meal last night.
Today I have had:
coffee w/ coconut creamer
sliced deli turkey
tomatoes
blueberries
strawberries
some paleo recipe pumpkin mini muffins that I made last night
a banana
an apple
I am hungry
I made a roast and veggies for dinner
I avoid red meat because it upsets my stomach

just one day
Ok, trying again. I never seem to get it right, do I? I really want to eat healthy, and I think I do eat many healthy foods - and some unhealthy ones too. Downfalls - chips, cheese, sugar in things like cookies and chocolate and probably lots of other stuff too.
So, I am going to try just one day of eating well and see how I do.
If I can make it.
The house is showing tonight and we may have to go out to dinner if it shows more than once.
So, today I did not take my allergy medicine - just trying it to see how I survive.
No coffee - drining twig kuchica tea.
will update as the day goes on.
Breakfast - kale, mushrooms, tomato - sauted in coconut oil w/ a little chicken stock
Egg - fried in same pan
1/3 of an avacado w/ a little lemon juice
the rest of the tea and some water
lunch ish - leftover veggies - green bean, carrot, broccoli, zucchini - steamed from last night,
blueberries and a few cherries, a few bites of chicken while straining the broth, water
So, I am going to try just one day of eating well and see how I do.

Ok, I am trying again.
I have gained weight and do not like that at all.
I am reading Wheat Belly in which the author recommends removing all wheat from one's diet.
Ugh.
Breakfast - fried in non-stick saucepan (oh, the horror) - in olive oil and butter - mix of mushrooms, kale, spinach, tomato w/ a little garlic and onion. Topped w/ fried egg.
Two cups of coffee sweetened w/ vanilla stevia and a little milk.
Lunch - salad - lettuce, spinach, yellow squash, mushroom, olives stuffed w/ garlic and jalapeno, sunflower seeds, colby/jack cheese, turkey lunchmeat
Dressing - a little fresh squeezed lemon juice, and homemade dressing - olive oil, balsamic vinegar and dijon mustard.
Snack - a few almonds
Dinner - grain mix - quinoa, millet, amaranth, teff, chia; 1/4 baked potato w/ butter, cheese, sour cream; some butternut squash, salad, chocolate chips

Worked late last night and slept in a little this morning. Don't work until noon today.

Lunch - sandwich on 35 cal bread - turkey and cheese
pretzels - 100 cal bag - have about 1/4 bag leftover

resurrecting this due to fatness 9/7/11
My fat clothes are tight.
So, it is time to do something about it.
Ugh.
Breakfast - coffee w/ vanilla stevia and heavy whipped cream. I know the whipped cream is bad, but we have no creamer and I needed to use this stuff up and it is now all gone. that is my excuse. yeah.
1 Egg - fried in butter - just a little bit
Collard greens - fried in a bit of olive oil w/ a bit of fresh garlic, onion and ginger, mirin and braggs liquid aminos
Walked around neighborhood about 20 min.
Went to grocery store - ate a half of a tortilla w/ cheese. It was a free sample. Therefore it should not contain calories.
Lunch - salad
Salad is my favorite food and can, should and does contain a large variety of ingredients when I make a salad.
Today's salad contained: red leaf lettuce, cherry tomatoes, yellow bell pepper, cucumber, leftover corn (scraped off the cob), leftover salmon, feta cheese, olives and a
homemade salad dressing made of: olive oil, balsamic vinegar, apple cider vinegar, dijon mustard, fresh pressed garlic and lime juice
small handful of sunflower seeds
drank water
2:45pm - 2nd lunch? snack? - chips and dip - not a ton, really; 1/2 sandwich - turkey breast on 35 calorie bread w/ some olives. and drank water
don't like writing this down.
and I am still hungry.

I am baking banana bread. I have to do it. 3 bananas were going bad. I could not let them go to waste. I suppose they may go to waist instead though. I made two loaves. One will stay home and the other will go to work w/ me tonight. They are semi-healthy and contain fresh ground amaranth, millet, salba, steel cut oats, teff and chia, bananas, white flour, coconut oil, salt, baking powder, peanut butter powder, almond meal, eggs, milk, cinnamon - not listed in order of amounts. :) It is an adaptation of a weight watcher's recipe and the original recipe contains no oil, but I put in less than one fourth of a cup of coconut oil because that really makes it better and there is not a lot of sugar, and I added a little bit of maple syrup too. You should smell my house right now. Yum! My husband and son walked in the door and both asked if I was baking banana bread and my son asked when it would be done.
5 pm - ate the other half of the sandwich. I have to get ready for work soon.
And am eating two slices of banana bread. Hot. With butter. Yum! And water.
Maybe I will lose weight from all the walking back and forth from the kitchen to the office to type this stuff up every time I eat something?
8 pm - at work - ate a piece of banana bread w/ butter - warmed up. Yum. My co-workers appreciated the banana bread. It all disappeared. :)
Also had pistachios (12 - I counted the shells afterward - and almonds - probably about 12 too, and a nectarine.
So, it is time to do something about it.
